True “Diver” Scallops are those that are hand harvested from the ocean floor by professional fishermen who are licensed scuba divers. This is the ultimate in responsible fishing as it has no impact on the ecology of the inshore fishing grounds and minimal trauma to the living scallop itself, both which can occur through the conventional practice of ocean floor “dragging”.
Rod Mitchell pioneered this practice in the late 1980’s for the late Chef Jean-Louis Palladin. Maine diver sea Scallops have become an industry standard for the ultimate in fresh, pristine sea scallop.
