This recipe was given to me a while back by another chef.
Don’t ask why it’s called ‘inner beauty’ but it is a fiery, kick-in-the-mouth hot sauce. NOT for the timid!
But for those who love hot sauces, you MUST make it! It has a layer of flavors with the mustard, peppers, curry spices, mango and citrus that’s making my mouth water right now just thinking about it!
I love it on roasted pork and it goes particularly well on a cuban sandwich, an egg sandwich or barbecued meats.
- 2 cups fresh scotch bonnet or habanero peppers, seeds and all with stems removed.
- 1 cup yellow mustard
- 1 ripe mango, chopped
- 1/2 cup orange juice
- 1/4 cup brown sugar
- 1 teaspoon curry powder
- 1 teaspoon cumin, ground
- 1 teaspoon coriander, ground
- 1 teaspoon salt
- 1 teaspoon pepper
- Rough chop peppers.
- Puree with all other ingredients until smooth in food processor or blender.
Makes about 3 cups.
